Annotatsiya

The article examines the main directions of food and industrial use of sesame - one of the oldest and most valuable oilseed plants. Special attention was paid to culinary traditions and the biological value of the seeds, as well as the diversity of sesame oil applications in cosmetology, pharmaceuticals, and the technical industry. Modern processing methods, the use of secondary products, and the international experience of leading manufacturers were analyzed. The role of sesame as a functional product and strategic raw material contributing to the sustainable development of agriculture and industry was noted.
