DETERMINATION OF THE QUANTITY OF β-CAROTENE IN RED PEPPER CAPSICUM ANNUUM

Abstract
Capsicum annuum red pepper, which is widely used in the food industry, due to its rich chemical composition and healing properties, is one of the most widely used plants in folk medicine against microbes and worms. According to the literature data, the fruits of red pepper are rich in vitamins A and C. Pro-vitamin of vitamin A is β-carotenoid. Photometric studies of the amount of β-carotenoids in red pepper fruits showed their content of 44.25 mgpercentage, in hexane extract, in 96% alcohol solution up to 50.81%.
