Determination of the Antioxidant Activity of Melon Seeds

Melon seed antioxidant has the property of acting on free radicals (O2, HO, HO2) and unsaturated fatty acids with free radicals (RO, RO2). It has been observed that the optical density of melon seeds decreases over time when its antioxidant activity is detected in dfpg relatively in vitro conditions. Compared to ascorbic acid obtained as a controller (251±14.0), melon seeds (359±11.0) have been found to have antioxidant activity.
