LACTOSE INTOLERANCE IN UZBEKISTAN AND QUALITY INDICATORS IN THE PRODUCTION OF LACTOSE-FREE YOGURT

Abstract
This article discusses the problems and solutions of lactose intolerance in the Republic of Uzbekistan and the world. Most of the population in our country loves to eat dairy products, especially yogurt (known as "yogurt" in the local language). However, due to problems related to the digestion of lactose in milk, various health problems arise among consumers. In order to prevent this and to deliver quality yogurt without lactose, in this experiment, the fermentation processes and quality indicators between the starter (microorganism) Yoflex acidifix 1.0 and Nola Fit 5500 enzyme, widely used in yogurt production, were analyzed.
