Abstract
This article studied the antioxidant activity of fig fruits (Ficus carica L.) and unabi (Zizifus jujube Mill.), growing in the Fergana Valley, and their mixtures in different proportions. According to the results of the experiment, an aqueous extract of unabi and black fig fruits in a 1:1 ratio showed the ability to strongly inhibit the autoxidation reaction of adrenaline in vitro and showed the greatest antioxidant activity. This mixture was recommended for use as a new therapeutic food supplement and received the preliminary name "Askarun". As a result of determining the amount of 46 macro- and microelements in the food supplement "Askarun" using the ICP-OES method, it was shown that there are many minerals beneficial to human health. It was found that the concentration of macro- and microelements in the developed food supplement is significantly lower than the limit of their toxicity or the established maximum permissible concentration.
