This article reviews scientific data on the chemical composition, nutritional and pharmaceutical value, and medicinal properties of bell pepper. Studies have shown that bell pepper contains biologically active substances such as phenolic compounds, flavonoids, and carotenoids, which have antioxidant, anti-inflammatory, and antidiabetic properties. These compounds are useful in preventing cardiovascular disease, cancer, osteoporosis, and other chronic diseases. The article also examines the potential applications of bell pepper extracts in the food and pharmaceutical industries, including their use as preservatives, dyes, or biologically active additives. These studies provide a basis for the widespread use of bell pepper not only as a food product, but also as a biological supplement beneficial to human health.
