THE AMOUNT OF WATER-SOLUBLE VITAMINS IN THE SEEDS OF BLACK (BUNIUM PERSICUM) AND YELLOW (CARUM CARVI) CUMIN.

Abstract
In this paper, water-soluble vitamins in black and yellow caraway seeds (Bunium persicum and Carum carvi) were determined and their composition was analyzed using high-performance liquid chromatography (HPLC). The study measured the content of 7 different vitamins and compared the vitamin profiles of the two seeds. The results showed that black caraway seeds were richer in vitamins B2, B3, B6 and C, while yellow caraway seeds were superior in vitamins B1, PP and B9.
