Abstract
In medicine, many medicinal plants are of invaluable importance due to their healing properties. Sorrel (Rumex) is no exception, and because of its therapeutic qualities, it is widely consumed as a food source. The plant contains a variety of vitamins, minerals, phenolic compounds, antioxidants, as well as macro- and microelements. This article examines the determination of water-soluble vitamin content in sorrel extract using the HPLC (High-Performance Liquid Chromatography) method.
