Abstract
This article provides a scientific analysis of the physical-mechanical and technological foundations of the grain drying process as applied to long-term storage of agricultural products. The capillary-diffusion movement of external and internal moisture within the grain, the time-dependent change in drying rate, and the three principal stages of the drying process—initial heating, constant-rate period, and falling-rate period—are examined based on the drying curve characteristics. The study highlights the importance of drying uniformity, permissible limits of moisture and temperature non-uniformity, the impact of mechanical damage, and storage stability. The classification of drying methods is systematized according to the nature of the drying agent, heat-transfer mechanism, pressure regime, flow direction, and structural design of drying equipment. A multifactor approach to dryer selection is proposed, taking into account the physico-chemical properties of the product, initial and final moisture contents, energy consumption, throughput, and techno-economic indicators. The article substantiates the advantages of applying drying and tempering (intermittent drying) cycles in recirculating grain dryers, emphasizing their effectiveness in reducing moisture gradients, enhancing internal diffusion, improving grain quality, and increasing energy efficiency.
