An analytical review of the basic information on the content of carbohydrates and amino acids in honey, as well as a study of the quantitative content of carbohydrates and amino acids by HPLC, is presented. When identifying the naturalness of honey, in addition to determining the amount of carbohydrates and diastase number, it is also recommended to study the amino acid composition, in particular proline. These parameters are a key indicator when assigning international codes for natural honey, corresponding to the FEACN.
