ANTIOXIDANT ACTIVITY OF FOOD SUPPLEMENT BASED ON MANDARIN AND KIWI FRUIT PEEL

Abstract
This article presents the results of a study on the antioxidant activity of various compositions made from the peels of Turkish mandarins and Iranian kiwis, which are considered waste products. The findings showed that the mixture of mandarin and kiwi peels in a 1:3 ratio demonstrated higher antioxidant activity compared to other blend ratios. These composite mixtures are recommended as a novel natural antioxidant food additive to combat oxidative stress, which causes various diseases in the human body, and have been tentatively named “Asfam.”
