Аннотация
The article presents data on the content of protopectin and pectin substances in the fruits of the following varieties of apricots grown in Uzbekistan: Arzami, Yubiloeiniy Navoi, Kursodyk; peaches: Start, Malinovii; plums: Ispolinskaya, Vengerka fioletovoya. The results of the study show that apricot fruits are richer in pectin substances than plums and peaches. The total content of pectin substances in the Arzami apricot variety is -1.28 percent, in the Yubiloeiniy Navoi variety - 1.32, and in the Kursodyk variety - 1.25 percent.
