Аннотация

This paper analyzes the mechanical composition and processing parameters of plum varieties considered promising for processing. The study examined the proportional relationships between total fruit weight, pulp, and pit size, and assessed the production efficiency of each variety. The results show that the ‘Black Diamond’ and ‘Yutuk’ varieties have high pulp content and small pits, which minimizes waste. The influence of fruit size and shape on mechanical structure is determined, and scientifically based recommendations for the most optimal varieties for juice and dried fruit production are developed.
