Аннотация

This article describes the characteristics of industrial tomato varieties, their chemical composition, and the technology of preparing leaf-based products. It also evaluates the efficiency of leaf products from table varieties such as TMK-22, Volgograd-195, Uzmash-1 and Peremoga, as well as industrial varieties including Peto-86, Tristar, Kaspar and Jina, in terms of freezing and storage conditions used in the processing industry.
