Abstract

 The article explores the significance of the precooling process in the long-term storage of raspberry varieties. This method reduces the respiration rate of the fruit and minimizes quality loss. Through experiments, the effectiveness of rapid cooling in maintaining the marketability of berries is scientifically substantiated, and recommendations for optimal temperature regimes are developed.
