Abstract
In this article, we found that, despite sweet potatoes being a relatively new crop, there is a high demand for products made from them, given the lifestyle of our population. To meet this demand, an experiment was conducted to provide the population with dried sweet potatoes еar-round, and specific conclusions were drawn about the drying process. Based on these findings, information on the obtained results is presented.
